• BD1: 
  • Stage 1: 
    • Fishes were caught from the sea. 
    • Transported by boat to ports. 
    • Frozen in containers.
    • Thawed to loose stiffness in a water tank
• BD2: 
  • Stage 2: 
    • Cut, sever heads from bodies. 
    • Put into salt water, added yellow color => presumably to make it look more appetizing. 
    • Smoked in an oven. 
• BD3: Có thể gộp vào Body 2 tùy thuộc vào độ dài của các giai đoạn.
  • Stage 3: 
    • Put into square boxes, than packaged in larger container at 0 Celcius. 
    • Stored in cold condition, before being transported to shops. => Available for consumption.

The diagram illustrates the production of smoked fish. 

Overall, the process consists of 13 steps, beginning with fish being caught from the ocean to distribution of the end products at shops dedicated to fish products. These steps can be categorized into three main stages, including transporting, processing and packaging. 

In the first stage, fishes are caught from the sea and transported by boat to the ports, where they are frozen in cold containers. Subsequently, they are poured from these containers into a water tank to undergo a process called “thawing” in order to lose their stiffness. After that, they are taken out of water, concluding the transporting stage. 

The second stage begins with the fishes’ heads being severed from their bodies by using large-blade knives. When they are soaked in a tank full of salt water in the next step, yellow color is added, presumably to make the fishes more appetizing. In the subsequent step, those fishes are transferred into an oven where they are smoked.

After being smoked, the fishes are put into square boxes, commencing the third stage. These boxes are packaged into larger containers, where the temperature is put at 0 Celcius. At this point, they are stored under a cold condition for a while before being transported to fish shops. By then, they are ready for consumption.
